MASALA BUDDHA BOWL

Ingredients

175g (1 pack) of ‘Moreish Masala’ Better Bites

1 tablespoon rapeseed oil

8 stalks of tenderstem broccoli

1 yellow pepper, sliced into strips

1 large carrot, grated
-
½ red pepper, diced
-
1 can chickpeas
-
½ teaspoon cumin
-
½ teaspoon coriander
-
½ teaspoon turmeric
-
Salt, to taste

120g white basmati rice
-
Handful of coriander
Instructions

Cook the basmati rice according to the instructions on the pack.

Boil some water, add it to a saucepan, then boil the broccoli stalks for 8 minutes until softened.

In a frying pan, heat the other tablespoon of rapeseed oil over medium heat for a minute, then add in the Better Bites. Cook for 2-3 minutes, stirring regularly to ensure they are evenly cooked.

Mix the chickpeas, cumin, coriander, turmeric and salt together in a bowl.

Place the rice, Bites, curried chickpeas, broccoli, carrot, pepper into a bowl, then top with coriander. Enjoy!
