MASALA BUDDHA BOWL

Ingredients

  • 175g (1 pack) of ‘Moreish Masala’ Better Bites

  • 1 tablespoon rapeseed oil

  • 8 stalks of tenderstem broccoli

  • 1 yellow pepper, sliced into strips

  • 1 large carrot, grated

  • ½ red pepper, diced

  • 1 can chickpeas

  • ½ teaspoon cumin

  • ½ teaspoon coriander

  • ½ teaspoon turmeric 

  • Salt, to taste

  • 120g white basmati rice

  • Handful of coriander

Instructions

  1. Cook the basmati rice according to the instructions on the pack. 

  2. Boil some water, add it to a saucepan, then boil the broccoli stalks for 8 minutes until softened. 

  3. In a frying pan, heat the other tablespoon of rapeseed oil over medium heat for a minute, then add in the Better Bites. Cook for 2-3 minutes, stirring regularly to ensure they are evenly cooked. 

  4. Mix the chickpeas, cumin, coriander, turmeric and salt together in a bowl. 

  5. Place the rice, Bites, curried chickpeas, broccoli, carrot, pepper into a bowl, then top with coriander. Enjoy!
