MASALA TEMPEH WRAP

Ingredients

  • 175g (1 pack) of ‘Moreish Masala’ Better Bites

  • 2 tablespoons rapeseed oil

  • 1 courgette, sliced into chunks

  • 1 sweet potato, sliced into chunks

  • 1 red pepper, finely diced

  • ½ teaspoon cumin

  • ½ teaspoon turmeric

  • ½ teaspoon garam masala

  • Salt to taste

  • 2 vegan naan breads

  • ½ red onion, finely diced

  • 2 tablespoons of mango chutney

  • Handful of coriander

Instructions

  1. In a frying pan, heat a tablespoon of rapeseed oil over medium heat for a minute, then add in the sliced courgette, sweet potato and red pepper. Cook for one minute, then add in the cumin, turmeric, garam masala and salt, to taste. Cook for another 7-10 minutes, until the sweet potato is soft enough to pierce with a knife. 

  2. In a separate frying pan, heat the other tablespoon of rapeseed oil over medium heat for a minute, then add in the Better Bites. Cook for 2-3 minutes, stirring regularly to ensure they are evenly cooked. 

  3. Place the veggies and Bites on a Naan, then top these with some mango chutney and coriander, before wrapping it up ready to eat. Enjoy!
