MASALA TEMPEH WRAP

Ingredients

175g (1 pack) of ‘Moreish Masala’ Better Bites

2 tablespoons rapeseed oil

1 courgette, sliced into chunks

1 sweet potato, sliced into chunks

1 red pepper, finely diced

½ teaspoon cumin
-
½ teaspoon turmeric
-
½ teaspoon garam masala

Salt to taste

2 vegan naan breads
-
½ red onion, finely diced
-
2 tablespoons of mango chutney

Handful of coriander
Instructions

In a frying pan, heat a tablespoon of rapeseed oil over medium heat for a minute, then add in the sliced courgette, sweet potato and red pepper. Cook for one minute, then add in the cumin, turmeric, garam masala and salt, to taste. Cook for another 7-10 minutes, until the sweet potato is soft enough to pierce with a knife.

In a separate frying pan, heat the other tablespoon of rapeseed oil over medium heat for a minute, then add in the Better Bites. Cook for 2-3 minutes, stirring regularly to ensure they are evenly cooked.

Place the veggies and Bites on a Naan, then top these with some mango chutney and coriander, before wrapping it up ready to eat. Enjoy!
