TEMPEH BURRITO BOWL

It has all the flavour of a burrito but is actually easy to eat. Is this what dreams are made of? Yes, it sure is.

Ingredients

175g (1 pack) of ‘Tantalising Taco’ Better Bites

120g white basmati rice
-
1 tin (400g) of kidney beans
Salsa:
-
2 large tomatoes, diced
-
1 red pepper, diced
-
½ red onion, diced
-
½ lime
-
Handful of coriander
Guacamole:
-
1 avocado (soft), mashed
-
½ red onion, diced
-
Salt and pepper to taste

½ lime
‘Cheese’ sauce:
-
1 cup of cashews
-
2 tablespoons nutritional yeast
-
1 teaspoon paprika
-
1 teaspoon miso
-
½ cup water
Instructions

Soak the cashews in boiling water for 20 minutes until they almost double in size.

Boil the kettle and cook the rice according to the instructions on the packet.

Dice all the veggies for the salsa and guacamole.

Mix the ingredients of the salsa together, along with the juice of the lime.

Mix the ingredients of the guacamole together, along with the juice of the lime.

Blend the ingredients of the ‘cheese’ sauce together in a blender or food processor.

In a frying pan, heat the other tablespoon of rapeseed oil over medium heat for a minute, then add in the Better Bites. Cook for 2-3 minutes, stirring regularly to ensure they are evenly cooked.

Add the rice, beans, salsa, guacamole and Bites into the bowls, then top with the cheese sauce. Enjoy!
