TEMPEH SALAD w/ SESAME & GINGER DRESSING

Ingredients

  • 175g (1 pack) of ‘Saucy Stir-Fry’ Better Bites

  • 1 tablespoon rapeseed oil

  • 2 carrots, grated

  • 1 red pepper, finely diced

  • 2 celery stalks, finely diced

  • 1/4 medium red onion, finely diced

  • 1/4 cup coriander, chopped

  • 2 tablespoons toasted sesame seeds

  • 1/4 cup roasted cashews


Dressing:

  • 2 tablespoons sesame oil

  • 1 tablespoon fresh squeezed lemon juice

  • 1 tablespoon maple syrup

  • 2 teaspoons soy sauce

  • 1 teaspoon grated ginger

  • 1 small clove of garlic, grated

  • Sea salt to taste

Instructions

  1. In a frying pan, heat the tablespoon of rapeseed oil over medium heat for a minute, then add in the Better Bites. Cook for 2-3 minutes, stirring regularly to ensure they are evenly cooked. 

  2. Combine all the dressing ingredients in a small bowl and whisk together. Set aside.

  3. Toss all the remaining ingredients together in a medium-sized bowl. Pour over the dressing and toss to coat. Enjoy!
