TEMPEH TACOS

The ideal make-your-own dish to make those hosting duties that little bit easier. It’s a real winner, trust us.

Ingredients

TEMPEH:

  • 1 pack of our soy tempeh or lupin tempeh

  • 4 teaspoons olive oil

  • 1 teaspoon coriander

  • 1 teaspoon cumin

  • ½ teaspoon chilli powder

  • ½ teaspoon cinnamon

  • ½ teaspoon cocoa powder

  • ½ teaspoon salt

SALSA:

  • 2 tomatoes 

  • 1 red onion

  • 1 red pepper

  • Half a lime, squeezed

TO SERVE:

  • 6 taco shells

  • 1 avocado

  • 100g vegan sour cream

  • 1 bunch spring onions

  • 1 bunch of coriander

Instructions

  1. Slice the tempeh into the chunks.

  2. Heat olive oil in a pan over medium heat. Add in the tempeh and heat for around 3 minutes until slightly browned. Add in the spices and salt and cook for another 5 minutes until a dark brown colour. Take off the heat. 

  3. To prepare the salsa, finely chop the tomatoes, red onion and red pepper and mix together in a bowl, along with the fresh lime juice. 

  4. Slice up the avocado into chunks.

  5. Start compiling your tacos (don’t forget to include the vegan sour cream!) and add coriander and spring onions to garnish!
