Coronation Tempeh Sandwich

This Curry Tempeh Pieces Coronation Sandwich is the perfect combination of creamy, nutty and zesty flavours.

ingredients

  • 2 slices Multi Seeded Bread
  • ½ pack Better Nature Curry Tempeh Pieces

Coronation Marinade:

  • 4 tbsp Plant-Based Yogurt
  • 1x Lemon (Juice / zest)
  • 2 tsp Mild Curry Powder
  • ⅓   tsp Cinnamon
  • Flaked Almonds
  • Tbsp Chutney
  • Salt & Pepper

Garnish (optional):

  • Watercress
  • Radish
  • Coriander

instructions

  1. Add a tbsp of vegetable oil to a medium - high heat frying pan.
  2. Add the Better Nature Curry Tempeh Pieces into the pan and cook for 4 - 5 minutes until heated through.
  3. Add your cooked Curry Tempeh Pieces to a bowl. Add the plant-based yoghurt, spices, chutney, flaked almonds, lemon juice / zest and mix well.
  4. Toast the slices of bread to add some extra crunch.
  5. Top your toasted bread with your Coronation mixture and garnish with some watercress, radish and coriander. Add the other slice of bread on top. Serve immediately.
